I think next time I will cook the onions in another pan and add them a little underdone to retain their crunch. Also some chunkier tomatoes would taste good, although that’s my own preference. I think a grilled cheese is mandatory with this (American cheese, for Jacob).
You have to be careful with the Sherry, I used a full cup and you could really taste it, if you like a slight vinegary taste you can use the full cup, but you should let it boil. Using a less amount might be more friendly for large groups. Likewise with the cream, it’s very rich but very good :).
Another thing I really enjoyed was that all the ingredients were <$15 from the store. Makes a ton and is super quick. Use store brand products, Campbell’s can eat dirt.
