Took the advice and doubled most of the spices and the garlic. Used two bags of boil in bag basmati rice, cut open and dumped in. No onion, puréed the tomatoes since my oldest won’t eat anything with tomato chunks and it added flavor and thickened it up. Only used two cups of chicken broth and it boiled down nicely. Served over ground taco beef and topped with cheddar Jack cheese. Would be fabulous with diced avocado on top. Did not have parsley but drizzled lemon oil over the top.
