I didn't have any chicken stock, so opted to not drain the beans. Used petite carrots and (4) country link sausages (bigger than chipolatas). Stirred the Dijon into the peas before I added them to the casserole.
The juice from the beans and tomatoes cooked into a gravy with the vegetables. Because the sausage is a little bigger I adjusted the cooking times by about 5 minutes each round. Opted not to serve over potatoes, rice or pasta. It was easy and delicious!
