Ooh, it's really tasty. Maybe not the most kid friendly, but mine liked the cheesy sweetpotato at least. Next time I'd cut the carrots smaller and I'd probably dice the onions instead of slices. I cooked the lentils in the Instant Pot and they became quite mushy, but they still worked well in the meal.
