Instructions

Step 1
Preheat your oven to 350 and grease a 9x5 loaf pan and set aside.
Step 2
Cook quinoa according to package instructions until fluffy.
Step 3
While quinoa is simmering, prepare your flax eggs. Combine 2 tablespoons of ground flaxseed with 5 tablespoons of water. Mix together in a small bowl and set aside for 10 minutes until mixture is gelatinous.
Step 4
Add in cooked quinoa, bananas, almond butter, flax eggs, maple syrup, milk and vanilla to your food processor or blender and blend on high for 1 minute.
Step 5
Pour mixture into a large mixture bowl and sprinkle flour, baking soda, baking powder, and salt and mix until just combined. Do not over-mix.
Step 6
Fold in chocolate chips if adding. Pour the batter into your prepared loaf pan and place sliced banana on top for decoration.
Step 7
Bake for 55 minutes and allow to cool before serving. Enjoy!
