Ingredients

¼ cupdry forbidden Rice
3/4 cups once cooked
1 ½ cupsedamame
thawed
0.5red bell pepper
capsicum, diced
2 cupcabbage
chopped, you can use red or white or a mix of both
1 cupmango
diced
0.5avocado
½ cupfresh mint
finely chopped
2scallions
finely chopped, spring onions
2 tspblack sesame seeds
2 tspfried shallots
optional
2 Tbsppeanut butter
2 Tbspfresh lime juice
1red chilli
deseeded
1garlic clove
peeled
1 Tbspfresh ginger
1 tspcoconut sugar
or other sweetener of choice
1 Tbsptamari
low sodium preferred
¼ cupsoy milk
Instructions
Step 1
Cook the rice according to the packet instructions.
Step 2
Blend the peanut butter, lime juice, chilli, garlic, ginger, coconut sugar, tamari, and soy milk. If you do not have a mini blender, mince the chilli, garlic, and ginger as finely as possible and whisk all the ingredients together. Add more liquid as needed to reach the desired consistency.
Step 3
In a large bowl, combine the cooked rice, edamame, red bell pepper, cabbage, mango, avocado, mint, green onions, sesame seeds, and fried shallots. Drizzle with the Spicy Peanut Ginger Sauce, and enjoy!
