Creamy pesto & kale pasta

We are diary free so I found a cashew based cream cheese and it worked great! I also cooked chicken specifically for this recipe…cut chicken breast into thinner slices, seasoned with salt, pepper, oregano and cooked on the stove in olive oil and butter. Juiced about 1/4 lemon into the pan while it was cooking. 5 minutes one side and 3 minutes second side, covered. It added some extra flavor to the recipe, it was great!

I really enjoyed this recipe! Very easy. We had it with grilled chicken and it paired well. I found it a bit bland at first, so I added extra pesto and some garlic powder as well as salt and pepper to taste. That definitely improved the flavor for me. Probably just a preference, but overall great recipe. Will make again!
