Instructions

Step 1
Preheat the oven to 350F.
Step 2
Use an electric mixer to mix together the eggs and coconut sugar.
Step 3
Add the peanut butter, vanilla, and sea salt.
Step 4
Mix again until the batter turns thick and sticky.
Step 5
Add the cereal and marshmallows to the cookie dough and fold it in. Save some of the marshmallows to add to the tops of the cookies.
Step 6
On a lined baking sheet, use an ice cream scooper (for big cookies) to scoop six mounds onto the baking sheet.
Step 7
Get a small cup of water and dip a fork into the water. Use the wet fork to make a criss-cross imprint with the back of the fork on the top of the cookie dough balls.
Step 8
Press some more colorful marshmallows to the top of each cookie.
Step 9
Bake in the oven for 10 minutes and then transfer to a cooling rack. Sprinkle with flakey salt (if desired) and enjoy!
