Instructions
Step 1
Chop eggplant into medium pieces
Step 2
Slice Thai red chili in a large cross cut, break kaffir lime leaf in half and pick fresh basil leaves
Step 3
Warm oil in pan and sauté green chili paste until fragrant.
Step 4
Add coconut milk, palm sugar and stir slowly to mix thoroughly until sugar is dissolved.
Step 5
Add tempeh or chicken and slowly simmer until cooked.
Step 6
Add eggplant, chili, kaffir lime leaf and basil to curry.
Step 7
Warm through for one to two minutes.
Step 8
Adjust flavor with soy sauce and serve in warm bowl.
Step 9
Garnish with sliced red Thai chili and basil leaf.
Step 10
Serve with steamed jasmine rice.
