Upside down savoury tarts

Puff pastry on top, shallot, mushroom, garlic, tomato, olive, chorizo & feta cheese all season below. Bake and turn out upside down to serve.

Instructions
Suitable Pie/Tart dishes
Step 1
Select 4 suitable pie/tart dishes and grease with a little oil
Filling

Peel and thinly slice the shallots, then add to hot oil in a frying pan to soften, slice the button mushrooms in half and cook through with the shallots. When softened add in the Tsp Garlic paste and mix together. Then using a slotted spoon remove from the pan and set aside. To the pots add 4 tomato halves, and 4 olives cut in half. Then add 4 suitable size pieces of Chorizo and top with some Feta cheese cubes. Add 2 spoonful's of Shallot and Mushroom and a little more Feta Cheese. Then season with salt & pepper.
Pastry Top
Step 3
Cut the pastry tops 2cm larger than the size of your dish. Keep the pastry cold, work straight from the fridge.
Tucking the Pastry in

Tuck the edge of the pastry down inside the dish, this creates a thick edge like a thick crust pizza
Baking

Bake in the centre of the oven at gas mark 6 for about 20 minutes until the pastry is golden brown
Serving
Step 6
To serve the tarts free up the edge with a knife and then turn upside down to empty onto the plate. This is a versatile recipe, you can alter the filling to suit your taste. We enjoyed them hot with fries/chips and salad.
