Sweet, savory, simple, and delicious! This one really brings summertime into focus. I brought this to a recent supper club gathering and it was a perfect complement to our picnic/cookout theme that day.

Step 1
Place the watermelon, cucumber and mint in a large bowl.

In a small bowl, whisk together the olive oil, lime juice and salt and pepper.
