Ingredients
5 servings
1 poundground beef
or ground lamb
1 cuponion
diced
2 tspgreek seasoning
5garlic cloves
minced
2 ¼ cupsbroth
1 ½ cupsbasmati rice
converted rice or long grain white rice
1 x 14.5 ozcan petite diced tomatoes
tomatoes
For serving, diced
feta cheese
red onion
kalamata olives
banana peppers
pita bread
1 cupplain greek yogurt
I use full fat
1cucumber
seeded and finely diced
1 Tbspdried dill
2garlic cloves
minced
½ tspkosher salt
¼ tsppepper
Instructions
Step 1
Turn Instant Pot to saute setting. When display says HOT add in the ground meat and break it up. Add in the onion. Brown for about 5 minute. Drain off excess grease.
Step 2
Stir in the greek seasoning and the garlic cloves.
Step 3
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Step 4
Sprinkle in the rice, dump in the tomatoes.
Step 5
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. Stir.
Step 6
Make the tzatziki sauce by stirring the yogurt, cucumber, dill, garlic, salt and pepper together in a bowl.
Step 7
In a bowl or plate scoop some of the rice mixture. Drop a big dollop of tzatziki on top. Serve with diced tomatoes, feta, red onion, olives and pita slices.
