Instructions

The Mix

Step 1
Mix water and tomato paste with all listed spices until well mixed

The Roux

Step 2
In a skillet, fully melt butter until bubbling
Step 3
Add all purpose flour by whisking it into butter until pretty smooth (be careful not to cook the roux for color - very light tan is good)

Becomes the Sauce

Whisk in the mix into the roux until fully dissolved
Step 5
Continue whisking until simmer, add salt to taste as needed, and reduce heat to very low. Continue to stir

Bring the Beef

Brown ground beef over medium high heat
Step 7
Add spice mix to beef and mix well

Part the beef to leave open the center of the pan where the fat should pool. Add flour and mix with fat well. Then mix well with beef

Add tomato paste
Step 10
Add water then let it cook for a few more minutes. Salt to taste as needed

The Enchilada ala Burrito

Preheat oven to 350 F and then toast each flour tortilla until light color
Step 12
Spread thin layer of beans all around the tortilla
Step 13
Add beef across the diameter of the tortilla

Roll closed and place onto a sheet pan or individual iron skillet with a think layer of sauce at the bottom
Step 15
Add sauce on top for most of the length of the burrito.
Step 16
Sprinkle generous amount of cheese on top of burrito
Step 17
Place into preheated 350 F oven until cheese is fully melted and bubbling
