Instructions
Step 1
Preheat the oven to 180°C. Chop the onions, pepper, and potatoes.
Step 2
Heat a large, lidded frying pan with a drizzle of olive oil. Add the chorizo and cook for 3-4 minutes or until crisp.
Step 3
Place the veg into the pan. Cook for 3-4 minutes or until the potatoes are starting to brown. Add the chopped garlic and cook for 1 minute.
Step 4
Dissolve the vegetable stock cube into 400ml boiled water. Stir in the tomato paste and 1tsp sugar.
Step 5
Add the tomato stock to the pan and cook covered for 12-15 minutes.
Step 6
Create a tin foil parcel on a baking tray. Place the cod fillets inside and place a knob of butter on each. Sprinkle with oregano, salt, and pepper. Cook in the oven for 10-15 minutes.
Step 7
Stir in a large knob on butter into the stew just before serving.
