Ingredients

2 ¼ cupsGluten free flour
I use Bob's Red Mills, you can also use regular flour
½ cupbutter
softened
1 cupsugar
1egg
¼ cupsour cream
½ tspbaking powder
¼ tspbaking soda
1 tablespooncornstarch
2 tspvanilla
1 tspalmond extract
½ tspsalt
Frosting
Instructions
Cookie Base
Step 1
Mix together all of your cookie ingredients until you have a soft dough. Everything should be incorporated and there should be no crumbs.

sour cream¼ cup
baking powder½ tsp
baking soda¼ tsp
cornstarch1 tablespoon
vanilla2 tsp
almond extract1 tsp
salt½ tsp
Step 2
Press the dough into a 9x9 parchment lined baking pan.
Step 3
Bake at 350F for 25-28 minutes. Its done when the top is no longer glossy.
Frosting
Step 4
Cream together the butter and powdered sugar. Slowly incorporating the powder sugar.

Mix in the milk, vanilla extract, and optional food colouring. If the frosting is too loose, add more powdered sugar, if its too thick you can add more milk. Beat the frosting for a few minutes until its light and fluffy.

Once the cookie base has completely cooled you can trim the edges if you would like, but that is totally optional! Spread the frosting evenly overtop.

If you chill them before you slice them the icing will look a bit nicer but I don't blame you if you cant wait! Cut them and enjoy!
