Instructions

Step 1
1. Combine meat with minced onion, garlic, coriander, salt, pepper and 1/3 of the char masala mixture. Knead until combined.
Step 2
2. With damp hands, roll into small meatballs. (Salt water works best on the hands; if needed an egg white wash may be used to help meatballs keep their form)

3. Fry the chopped onions in a pan until brown, then add tomato paste and cook until that browns as well. Add a small layer of water, salt and pepper.
Step 4
4. Bring water to a boil and add meatballs to pan, using additional water to just cover them. Cover pan, but leave a small vent.
Step 5
5. Simmer on low about 45-60m or until meatballs are brown and sauce is thick.
Step 6
6. Remove meatballs from pan and store on plate (or in oven-safe dish) add a cup of beef broth and remaining char masala to the same pan to cook the rice in.
Step 7
7. Combine meatballs with cooked rice, stirring gently. (If you put the meatballs in an oven-safe dish you may add the rice on top of them here) Cook covered on L or in oven @ 300F for 20m
