Chicken tikka pie

Instructions

Step 1
Heat the oven to 200 ̊C, fan 180 ̊C, gas 6. Line a baking tray and bake the sweet potato until tender. At the same time, boil the carrots in a small saucepan until tender.
Step 2
Heat the oil in a large frying pan over a medium heat and sauté the red pepper and onion for 5 minutes until lightly softened/translucent.
Step 3
Add the chicken to the frying pan and sauté for 5 minutes. Add the tikka masala sauce and stir through.
Step 4
Drain the carrots well, and remove the sweet potato from the oven. (Leave the oven on for the pie!)
Step 5
Add the carrots, sweet potato, peas, and coriander to the tikka masala filling and stir through. Season with salt and pepper to taste.
Step 6
Oil a medium-sized ovenproof pie or baking dish (about 30cm x 7cm deep), and line with shortcrust pastry.
Step 7
Transfer filling to lined pie dish, smoothing to evenly distribute it.
Step 8
Lay a sheet of pastry over the top of the pie dish. Trim the edges, crimp the sides, then make a small steam hole and brush with a beaten egg.
Step 9
Cook for 35-40 minutes (it will take a little less time in individual portions) until golden and crisp, and the filling is piping hot.
