Step 1
Use a big size tray and add the Khoya ,break the khoya with hands and start kneading to make sure no grains , until its smooth and creamy in texture.
Step 2
Add baking soda and egg, continue kneading until mix well.
Step 3
Start adding flour in batches, make sure not to add them all at once, (i did in 3 batches) mix well until it forms like a dough and not sticking together.
Step 4
After divide the dough in small and relatively equal size balls, i made around 14 g each.
Step 5
Roll in between palms one by one and make sure there are no cracks on the gulab jamun.
Step 6
Remain cover the balls with damp cloth so not get dry or hard from outside .

Heat up the oil , at 150 c
Step 8
Add one by one around the corners , fry in batches and do not overcrowd.
Step 9
And with light hand use the spoon to keep it circulated for even colour.
Step 10
Once they are nice golden brown, immediately drop them in luke warm sugar syrup and let it soak in sugar syrup around 5-6 hours. Then refrigerate.
Sugar Syrup Method

In a pot, add sugar and water, keep stirring until it dissolves completely, bring to a boil and turn off the flame.
Step 12
Add saffron, rose water & green cardamom powder. Stir and let it cool down to luke warm.
