Dinner leftovers were often transformed into the next morning's breakfast. After an initial adjustment, dinner-for-breakfast instead of cereal and toast became second nature -- even when it included pickled cabbage (sauerkraut) and a side of carrot salad!

Instructions

Step 1
heat the oil in a frying pan over medium heat

Step 2
add the carrot and sauerkraut tot he pan. Saute for 10 minutes, stirring with a wooden spoon to prevent sticking.

Step 3
add the rice, salt, and pepper and continue to cook for 5 minutes. Finish with a sprinkle of fresh parsley, if using. Serve hot
