Instructions
Cupcakes
Step 1
Preheat oven to 350 F.
Step 2
Line cupcake pan
Step 3
In stand mixer, mix oil and buttermilk until combined.
Step 4
Turn mixer off and add cake mix, turn mixer on low.
Step 5
Add 1 egg at a time.
Step 6
Add in vanilla and sour cream and mix until smooth
Frosting
Step 7
In stand mixer, mix butter, cream, salt, and vanilla on low.
Step 8
Turn mixer off and add in sugar 1 cup at a time mixing and n low until incorporated. Be sure to turn mixer off each time to avoid a mess.
Step 9
Turn mixer to medium high and mix until fluffy.
Strawberry Sauce
Step 10
In a medium saucepan, combine sliced strawberries, sugar and lemon juice.
Step 11
Place over medium heat and bring to a boil, stirring occasionally.
Step 12
Reduce heat and simmer 20 min or until sauce is thickened, stirring occasionally.
Step 13
Remove from heat and cool to room temperature. Sauce will thicken up slightly as it cools.
Assembling
Step 14
Poke a hole in the cupcake and cut out a small circle. Spoon in some strawberry sauce.
Step 15
With a piping bag, apply the frosting to the cupcakes covering the hole, but making the edges higher up.
Step 16
In the middle of the frosting, spoon in strawberry sauce so it sits in the little frosting bowl you made with the piping bag.
