Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
Heat butter and oil over medium-high heat in a large skillet until sizzling. Fry the first round of potatoes in a single layer until golden brown but still a little tender, about 2-3 minutes. Remove from pan, drain on paper towels, and repeat until all potatoes are cooked—season with garlic salt or salt and pepper.
Step 3
Arrange cooked potatoes in an overlapping pile on a baking sheet. Top with chili or chicken, then sprinkle with cheese and bacon.
Step 4
Bake for 8-10 minutes, until cheese is melted. Remove from oven.
Step 5
Top with jalapenos, sour cream, and scallions.
