Instructions
Step 1
In mixer, beat egg whites on high until peaks form. In a separate bowl, mix egg yolks and buttermilk.
Step 2
In another bowl, mix flour, baking soda and dash of salt.
Step 3
Combine flour mixture with egg yolk/buttermilk mixture until smooth.
Step 4
Slowly pour into egg whites, carefully folding liquid in. Do not over fold or over mix.
Step 5
Pour oil in hot skillet. Scoop batter into skillet for each pancake. Wait until edges around pancakes bubble (sign that they are now crisp) then flip until other side crispy.
