Instructions
Step 1
Saute' Onions in the butter until soft. Do not brown. Remove and cool Onions.
Step 2
Combine onions with all ingredients except demi-glace, cream and dill, mix well.
Step 3
Portion the meat mixture with a #20 scoop. Form into balls with your hands and place on a sheet pan.
Step 4
Bake the meatballs at 400 degrees until firm approximately 15 minutes. Remove meatballs from pan with a slotted spoon, draining well and place in a separate pan to hold.
Step 5
Combine demi-glace, cream, and dill and pour over meatballs.
Step 6
Cover the meatballs and bake at 350 degrees until done, approximately 20 minutes. Skim the grease from the surface and serve.
