Instructions
Step 1
Combine shredded carrots and sugar, let stand 10 minutes to soften.
Step 2
Fill a large bowl with warm water big enough to swipe rice paper through.
Step 3
Place rice paper in the bowl for 10-15 seconds or until pliable enough to roll.
Step 4
Place on a clean towel to drain rolls for a minute or so. When you start to roll add another to the bowl to soak.
Step 5
Lay one piece of lettuce over the bottom third of the rice paper. on the lettuce, place 1 Tbsp of noodles, 1 tbsp. of carrots, 1 or 2 pieces of Red Bell Pepper, some pickled cucumbers and mint leaves. Roll the paper halfway into a cylinder. Fold in the sides in an envelope pattern.
Step 6
Roll into a tight cylinder.
Step 7
Cut in half at an oblique.
Step 8
Serve with the Nuoc Cham sauce for dipping.
