Instructions

Step 1
Put the oven on 110’C and line two trays with greaseproof paper.
Step 2
Measure your icing sugar and caster sugar in a small bowl
Step 3
Separate your egg whites from the yolks and add the whites to a large bowl. (You can save the yolks for another recipe, if you wish). If you are nervous, you can do this, one egg at a time in small bowls and then move your whites to a large bowl.
Step 4
You need to whisk the whites on a high speed with an electric whisk until they form stiff peaks
Step 5
Slowly add the sugar (about 2 tablespoons at a time) and whisk for about 10 seconds. Continue until all the sugar is added. Give the meringues a final whisk for about 10 more seconds.
Step 6
If you wish to add flavour or colour, do so now, whisk for an extra 10 seconds.
Step 7
Spoon the meringues onto the trays or put the meringues into a piping bag. Cut 3cm’s off the top of the piping bag and pipe onto the tray.
Step 8
Cook for 1 hour until firm
