Step 1
Roast garlic - Cook pasta and reserve cooked pasta water to add later to sauce - Blend cottage cheese, basil, olive oil, Parmesan, roasted garlic, and seasonings - Sear chicken breasts (season with all the same seasonings and lemon pepper) - Add butter to the pan to baste and pick up any seasoning left on the bottom - Add the seasoned butter to the pasta sauce
- use a meat thermometer if you’re unsure when to take your chicken off the heat to rest (do not slice until rested!) - Heat the sauce on low, add butter, & mix in the pasta adding in pasta water as needed. (As it sits it will thicken) Taste & adjust seasoning -
Slice and stir in the chicken.
