Pesto
Step 1
Roast the pine seeds in a pan until slightly golden.
Step 2
To a blender add all the ingredients and blend until smooth.
Prawns

Cut the cherry tomatoes in half.
Step 4
Heat the oil in a pan. Leave the heat on medium high. Add the prawns and fry for about 1min until slightly pink.
Step 5
Add the cherry tomatoes and seasoning. Fry for another 1-1,5min.
Sandwich
Step 6
Cut the ciabatta in half.
Step 7
Spread one half with ricotta and the other half with pesto.
Step 8
Top the bottom half with the arugula, prawns and tomatoes.
Step 9
Drizzle on the balsamic cream.
Step 10
Stack the other ciabatta half on top and enjoy!
