Chicken Breast Puttanesca Style

Juicy, seasoned chicken breasts served in a zesty, flavorful sauce. This is a very quick and tasty dish that was offered at weight watchers. Just 5 points per serving. It is wonderful paired with spaghetti squash seasoned with salt, pepper, and feta cheese crumbles.

Instructions

Step 1
Sprinkle salt and pepper on both sides of chicken breasts.
Step 2
Spray large, nonstick skillet with nonstick spray.
Step 3
Cook chicken until golden brown on both sides and chicken is cooked through (165 degrees on a thermometer).
Step 4
Remove chicken and keep warm.
Step 5
In the same skillet melt butter and add garlic and pepper flakes (optional) and cook for about 30 seconds.
Step 6
Then add tomatoes, olives, and capers and incorporate any chicken bits on the bottom of the pan. Bring to a simmer and reduce heat to low.
Step 7
Let simmer for about 3 minutes until the liquid is slightly reduced.
Step 8
Add cooked chicken and its' juices back to the pan and heat through (about 2 minutes).
