Instructions

Step 1
Heat some oil in a large saucepan on high heat and sauté the onions and garlic until softening. Add in the peppers and courgettes and continue to cook until the courgettes have reduced to half their original size. Stir in the tomatoes, tomato purée and herbs. Bring to the boil, season to taste and simmer for 15 minutes. Add a thin layer of sauce to the bottom of two bread tins. Add a lasagna sheet on top and spread some cottage cheese over it. Grate in some cheddar before layering on more sauce and repeating the process. After about 4 layers, finish with a final layer of sauce topped with cheddar cheese. Heat the oven to Gas Mark 7/425F/220C and bake for 25 minutes. Serve hot.
