Instructions
Step 1
Heat olive oil in a large pot over medium heat. When it is shimmering, add the chicken and all of the seasoning. Cook on each side for 6-8 minutes (or until it reaches an internal temperature of 165 degrees F), then remove to a clean plate.
Step 2
Add the carrots, onion, celery, and garlic to the pan. Add additional salt and pepper to taste and sauté until everything becomes soft and glossy. While the vegetables are cooking, cut the chicken into bite-sized pieces. Return the chicken to the pot.
Step 3
Add butter and allow to melt and coat everything, then add flour and stir to combine.
Step 4
Add the dill, thyme, and bay leaves, then slowly add the stock in 2-3 parts, stirring as you go. Taste for seasoning.
Step 5
Bring soup to a simmer or boil, then add egg noodles and cook according to package instructions.
Step 6
Add the heavy cream. Once heated through, remove the bay leaves and any sprigs of thyme and the soup is ready to serve with sour cream, balsamic glaze, and crackers.
