1 pounditalian sausage
olive oil
1yellow onion
diced
6 clovesgarlic
2 Tbsptomato paste
28 ozcanned peeled tomatoes
7 cupschicken broth
2 tspnparsley
dried
2 tspnoregano
dried
2 tspnbasil
dried
2 tspnitalian seasoning
red pepper flakes
¼ cupheavy cream
Pasta noodles
1 cupricotta
1 cupmozzarella
½ cupparmesan
fresh basil
for topping

pepper

Instructions
Step 1
Chop up and brown the italian sausage in large pot. Set aside.
Step 2
Add olive oil and chopped onion to the pot. Cook for about 5 minutes then add chopped garlic.
Step 3
Cook for a couple more minutes then add then tomato paste. Let the tomato paste cook for a bit before adding the canned tomatoes and gently breaking them up in the pot.
Step 4
Add the chicken broth, dried seasonings, and salt and pepper to taste.
Step 5
Add the sausage back into the pot with the heavy cream.
Step 6
Bring to a boil then add in the pasta. Reduce to a medium-low heat and let it simmer for 15 minutes.
Step 7
Mix the three cheeses together for the topping.
Step 8
Once the pasta is cooked, serve the soup in a bowl topped with the chees mixture and some fresh basil.
