Instructions
Step 1
In a large pot, sauté onion, carrots, and celery until softened. Add oxtail and brown for 3-5 minutes per side.
Step 2
Add chicken stock and chicken bone broth. Scrape brown bits from the bottom of the pot. Add french onion soup packet and bring to a boil. Cover and simmer for 4 hours.
Step 3
Throughout the 4 hours, skim off any scum or fat.
Step 4
Last 30 minutes of cooking, add green beans and swiss chard. Add salt and pepper to taste.
