Instructions

Step 1
Preheat oven to 400F
Step 2
Cut each zucchini in half and scoop out all the seeds and some of the insides.
Step 3
Coat each zucchini in olive oil, salt, and pepper then add to a 9x13 baking dish.
Step 4
Bake for 12 minutes.
Step 5
To a bowl add in ricotta, 1 cup mozzarella, Parmesan, egg, parsley, and 1 tsp Italian seasoning. Store in fridge.
Step 6
To a pan brown meat and drain any excess grease. Once meat is cooked through stir in marinara sauce and 1 tbsp Italian seasoning.
Step 7
To each zucchini add an even amount of the ricotta mixture on the bottom then top evenly with meat mixture. Top with the remaining cup of mozzarella cheese.
Step 8
Cover with foil and bake for 30 minutes.
