Instructions
Step 1
Add 6 cups dashi as per packet instructions W/ Mirin,Soy,Sugar. Bring to simmer
Step 2
Boil udon noodles according to package instructions. Rinse under cold water and drain, set aside.
Step 3
In a new pot, saute pork belly until no longer pink. Add sliced onion and saute until it starts to soften.
Step 4
Add dashi broth to pork/onions, bring to boil, reduce to low boil
Step 5
Add around 3-4 curry cubes (to taste) and dissolve until soup becomes desired thickness. If too thick, add more water.
Step 6
Scramble 2 raw eggs in a small separate bowl, then slowly pour into the soup while whisking vigorously with chopsticks.
Step 7
To plate. Pour curry over udon, garnish, spring onion, seasame
