Instructions

Step 1
Boil the rice until it has softened but still has a bit of bite to it (around 10 minutes).
Step 2
Heat some oil in a pan on medium-low heat and add the onions and carrots. Fry until soft and then add the peppers and continue to fry until that too has softened.
Step 3
In a third pan, cover the sweetcorn and peas with boiling water and return to the boil before draining.
Step 4
Cook in three batches in a wok. Start by heating the oil and adding the tofu and cooking, turning every minute until golden on all sides on high heat. Add 1/3 of the rice and vegetables and stir fry for 2 and then pour over plenty of soy sauce and serve before moving onto the next batch.
