Ingredients

1.5 poundsboneless skinless chicken breasts
sliced into thin strips
3bell peppers
red, green, and yellow, thinly sliced
1onion
large, thinly sliced
2 tablespoonsolive oil
2cloves garlic
minced
2 teaspoonschili powder
1 teaspooncumin
1 teaspoonpaprika
salt
to taste
black pepper
to taste
1juice of lime
12whole wheat tortillas

Instructions
Step 1
In a small bowl, combine the chili powder, cumin, paprika, salt, and black pepper. This is your fajita seasoning.
Step 2
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and half of the fajita seasoning. Cook for about 5-6 minutes, stirring occasionally, until the chicken is cooked through. Remove the cooked chicken from the skillet and set it aside.
Step 3
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers, onion, and minced garlic. Sprinkle the remaining fajita seasoning over the vegetables. Cook for about 4-5 minutes, stirring frequently, until the vegetables are tender-crisp.
Step 4
Return the cooked chicken to the skillet with the vegetables. Drizzle the lime juice over the mixture and stir to combine. Cook for an additional 2 minutes to heat everything through.
Step 5
Warm the tortillas according to the package instructions.
Step 6
Serve the chicken and vegetable fajita mixture inside the warm tortillas.
Step 7
Offer optional toppings like salsa, guacamole, shredded cheese, sour cream, and chopped cilantro for everyone to customize their fajitas.
