Instructions

Prepare the Bell Peppers:

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly grease a baking dish that can hold the peppers upright.

In a large skillet over medium heat, cook the ground beef or ground turkey until it's browned and cooked through. Break it apart with a spoon as it cooks. Remove any excess fat.

Stir in the cooked rice, black beans, corn kernels, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for an additional 2-3 minutes to combine everything. Adjust seasoning to taste.
