This whimsical creation marries the sweetness of honey with the brightness of lemon, all wrapped in the warm embrace of olive oil. It’s a cozy stroll through lemon groves, for those that don’t have the trees near them.

Instructions
Step 1
Preheat your oven to a cozy 350°F.
Step 2
While the oven is pre-heating, line your 9" cake round pan with a parchment paper.
Step 3
In a large bowl, combine your wet ingredients: eggs, honey, sugar, olive oil, yogurt, lemon zest, and lemon juice. Stir with care, whisking until the batter becomes smooth and lump-free.
Step 4
Gently sift in the dry ingredients - almond flour, all-purpose flour, baking soda, salt, and baking powder. Be mindful not to overmix. You just want to fold the ingredients until there are no lumps left.
Step 5
Pour your batter into the prepped cake pan, making sure it's spread evenly.
Step 6
Place your cake pan on the middle rack in the oven, letting it bake for 30-34 minutes, or until a toothpick inserted emerges clean.
Step 7
Let the cake rest for 10 minutes before inverting it onto a wire rack, to finish cooling.
Step 8
Decorate your cake with frosting, whipped cream, berries, or powdered sugar, before cutting yourself a slice to enjoy. :)
