Instructions

Step 1
Preheat oven to 200°C/180°C fan forced. Fit pastry into a lightly greased 3cm-deep, 20cm loose- bottomed fluted tart pan. Trim edges. Chill for 20 minutes. Bake pastry blind.
Step 2
Reduce oven temperature to 190°C/170°C fan forced. Combine rocket, onion, bacon and cheese; scatter mixture in the pastry case. Whisk together eggs, cream and milk. Season with black pepper. Pour evenly over filling. Bake for 30-35 minutes until filling is just set.
Step 3
Cool finished tart for 10 minutes on a wire rack before removing from pan or cutting. Best served warm or at room temperature.
Step 4
You can freeze cooked quiches in an airtight container for up to 1 month; thaw and reheat in a preheated warm oven. Do not microwave or pastry will become soft.
