Step 1
In a saucepan, cook the beef strips, until brown, and transfer the beef to another container.

Add the carrots, spring onions, garlic and ginger to the pan and cook for 5 minutes.

Return the beef to the saucepan, pour in the stock and the light soy sauce and rice wine (or dry Sherry). Add in the mushrooms, and sprinkle some pepper, bring to a boil, then reduce the heat and simmer for 10 minutes.
