Pumpkin sausage pasta

Deliciously simple and autumnal recipe for using up that 10p pumpkin after Halloween.

Instructions

Step 1
Finely dice the onion and add to a large sauté pan over a medium heat with a splash of oil.
Step 2
Peel and dice the pumpkin. Add to the pan with another splash of oil and sauté, stirring occasionally, until the edges of the pumpkin become soft and smushed.
Step 3
Add the mince or sausage meat and increase the heat. Grate, chop or crush the garlic and add that to the pan with some chilli flakes. Finely slice the sage and add most of it to the pan, reserving some for garnish.
Step 4
Once the mince is browned, add a splash of water and salt and pepper to the pan, cover and reduce the heat.
Step 5
Cook the pasta in salted boiling water. Stir the ricotta through the sauce, drain the pasta and add along with a splash of pasta water and a handful of grated parmesan.
Step 6
Garnish with the remaining parmesan and sage.
