Detox Cabbage Soup

Being a Type 1 Diabetic I find it difficult to break bad habits .. even when I have good intentions. And CARBS are so addicting! This Cabbage Soup is rumored to jump start weight loss but I'm using it as more of a detox. I just returned from a friends-trip to Disney World and as you can imagine, I ate a ton of junk!
This soup is jam-packed with nutrients, low in calories .. and CARBS! A couple days of this healthy soup and I'm sure to kick my carb addiction in order to make healthier choices going forward.

Ingredients

2 tablespoonsextra-virgin olive oil
1onion
medium, chopped
1 cupcarrots
chopped
3stalks celery
chopped
1red bell pepper
medium, chopped
1green bell pepper
medium, chopped
2cloves garlic
minced
1 ½ teaspoonsitalian seasoning
1 tablespoonHouse Seasoning
8 cupslow-sodium vegetable broth
1 headgreen cabbage
medium, halved and sliced
1tomato
large, chopped
2 teaspoonswhite-wine vinegar
Instructions
Step 1
Heat oil in a large pot over medium heat.
Step 2
Add onion, carrots and celery.
Step 3
Cook, stirring, until the vegetables begin to soften, 6 to 8 minutes.
Step 4
Add bell pepper, garlic, Italian seasoning, house seasoning and cook, stirring, for 2 minutes.
Step 5
Add broth, cabbage and tomato; increase heat to medium-high and bring to a boil.
Step 6
Reduce heat to maintain a simmer, partially cover and cook until all the vegetables are tender, 15 to 20 minutes more.
Step 7
Remove from heat and stir in vinegar.
