Ingredients

24 ouncesribeye steak
thinly sliced against the grain
1 tablespoonvegetable oil
1 tablespoonsesame oil
1 teaspoonsalt
½ teaspoonblack pepper
1 tablespoonfresh ginger
grated
1clove garlic
minced
½ cupsoy sauce
¼ cupwater
2 tablespoonswhite vinegar
1 tablespooncornstarch
mixed with 1 tablespoon of water
1 cuprice
cooked
2 tablespoonsfresh cilantro
chopped
Instructions
Step 1
Press the SAUTE button on your Instant Pot, then add vegetable oil, along with sesame oil.
Step 2
Sear the steak in the Instant Pot until it's brown (but not necessarily cooked through as it will be pressure-cooked later), and season it with salt and pepper.
Step 3
Add minced ginger and garlic to the pot, and cook for a couple of minutes.
Step 4
Press the CANCEL button on your Instant Pot. Then add the onions and mushrooms, soy sauce, water, and vinegar, and give everything a quick mix. If anything is stick to the bottom of the pot, deglaze/scrape it off with a wooden spoon.
Step 5
Close the lid of the Instant Pot, and make sure the valve is set to SEALING.
Step 6
Set the Instant Pot to MANUAL or PRESSURE COOK, and cook for 3 minutes on HIGH pressure.
Step 7
When the cooking time is complete, allow the pressure to release naturally for 5 minutes, then release any remaining pressure manually by turning the valve to VENTING.
Step 8
Open the lid and stir in the cornstarch mixture.
Step 9
Stir in the rice and cilantro (if using).
Step 10
Serve immediately.
