Instructions
Step 1
Put a half kettle on. Heat oil in a Dutch oven style pot to medium heat. Add mustard seeds and let them splutter.
Step 2
Add cumin seeds and asafoetida. Once they sizzle, add the green chilies and sauté for a few seconds. Careful not to burn the cumin.
Step 3
Add the cubed potatoes, turmeric, and salt. Stir well and cover the pan. Add a splash of boiled water. Cook on a medium flame until the potatoes are half-done (about 10 minutes).
Step 4
Uncover, and add the shredded cabbage. Mix well.
Step 5
Cover again and cook on at medium heat until the cabbage and potatoes are fully cooked (about 10-15 minutes), stirring occasionally.
Step 6
Once done, remove from heat. Season with salt & lemon juice.
Step 7
Garnish with fresh coriander.
