Step 1
Turn oven to 425 degrees and preheat.

Halve and peel onion. Finely chop.

Stem jalapeno, halve, seed if desired, remove ribs, and mince.

In a small microwave-safe bowl, combine sour cream, cream cheese, 1 tsp water, and hot sauce to taste.
Microwave until softened, 30 seconds.
Stir to combine.

Place a large non-stick pan over medium-high heat and add 1 tsp olive oil. Add meat and onions to hot pan.
Break up until starting to brown, 3-5 minutes.

Add chipotle seasoning, half the garlic salt, and 1/4 cup water.
Stir occasionally until mixture thickens and meat is cooked through, 1-3 minutes.
If mixture is too thick, add additional water, 1 tbsp at a time, until desired consistency is reached.
Remove from burner.

Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
Poke tortillas with a fork all over, 10 times for each tortilla. Place tortillas on a baking sheet.
Drizzle with 2 tsp olive oil and massage oil into tortillas.

Spread one half of each tortilla with the spicy cream sauce (or a thin layer over one entire side of the tortilla).
Fill tortillas with beef filling an cheese hen fold in half, pressing gently to adhere.
