Oven-Baked Sweet Potato Fries (Vegan)

Chip shop fries typically have energy densities of over 2 calories per gram so this healthier version could reduce energy intake by up to 200 calories or more per portion. One portion also provides more than a third of the recommended daily fibre intake and high doses of vitamins A and C. The key to oven-baked fries is getting them crispy without burning them to a cinder. And no one wants a soggy chip! We have found the sweet spot using half-inch thick fries and cooking them at 220°C on foil for 30 minutes, although timings may vary depending on the individual characteristics of your oven. This recipe makes one large serving so increase the ingredients accordingly for more portions.

Instructions

Step 1
Cut the sweet potatoes to around half an inch thickness and a similar length. Place a foil sheet on a baking tray and place in an oven preheated at 220°C. Add the oil, vinegar, salt and paprika to a small bowl and mix in the chips ensuring they are equally coated. Remove the preheated baking tray from the oven and place the fries on the foil without overlapping. Bake for around 15 minutes then turn the fries over. Return to the oven for a further 15 minutes until the fries are well browned but not burnt. If the fries are droopy return them to the oven until they are crisp. Leave to cool for 5 minutes. Add additional salt to taste. This recipe makes one large portion of fries.
