The Starbucks pumpkin loaf is a fall fave, so you know I had to put my own lighter spin on it. Check out my copycat recipe below. Perfect for Thanksgiving or anytime!
INGREDIENTS
½ cup vegetable oil
1 ¼ cups packed brown sugar
2 eggs
1 ¼ cup canned pure pumpkin puree
3 tsp pumpkin spice or 1 tsp cinnamon, 1 tsp ginger, 1/4 tsp ground allspice, ¼ tsp ground nutmeg
Salt dash
1 ½ cups all purpose flour
2 tsp baking powder
Icing
3 oz light cream cheese
2/3 cup icing sugar
INSTRUCTIONS
1. Preheat oven to 350 F,
add oil, brown sugar, eggs into bowl and mix well.
2. Add pumpkin, spices, flour and baking powder and mix until well combined.
3. Pour into 9” x 5” loaf pan sprayed with vegetable oil. Bake for 35 – 45 minutes or just until tester comes out clean. Cool.
4. Icing: in small food processor or with hand mixer, beat cream cheese and icing sugar, pour over cooled cake. Enjoy!!
