Pimped Up Packet Ramen p155

After a long day, sometimes all you need is some packet ramen. We’ve pimped it up with some crispy sesame oil fried tofu, spring onions, pak choi and fragrant coriander. All doused in hot sauce, bringing that ultimate comfort kick. SPEED HACK Cook the pak choi with the noodles in the packet ramen broth. Use both tongs and a ladle to divide between bowls.

Instructions

Step 1
Drain the tofu and cut into chunks. Get a large frying pan over a medium heat. Add the sesame oil and tofu and fry for about 5 minutes, turning occasionally with tongs, until golden all over.
Step 2
Meanwhile, pour boiling water from the kettle into a large saucepan over the heat as per the packet ramen instructions. Add the noodles along with their spice sachets. Boil for 2 minutes.
Step 3
While this is happening, thinly slice the spring onions and cut the pak choi into quarters lengthways. Drop the pak choi into the saucepan with the noodles. Cook for 2 minutes more.
Step 4
Ladle the ramen noodles and pak choi between four bowls, using the tongs to help pick up the slippery noodles. Top each one with the crispy tofu, scatter over the spring onions, tear over the coriander and serve with hot sauce.
