Step 1
Drain and dry chickpeas very well. Use paper towels and leave in colander to dry, or spread on paper towels.
Step 2
Preheat oven to 400. Place towel-dried chickpeas on a cookie sheet with olive oil and kosher salt, and bake 20-35 minutes or until crispy but not burnt. Toss a few times while baking.
Step 3
Remove chickpeas from oven. In a medium bowl, toss together the Parmesan cheese, garlic, salt, and pepper. Let cool and serve.
