Instructions

Step 1
Heat sesame oil in a large pan or wok over medium-high heat. Add tofu and cook until golden brown on all sides. Set aside.
Step 2
In the same pan, add bell pepper, broccoli, and carrot. Stir-fry for 5-7 minutes, until softened.
Step 3
Add sugar snap peas and cook for another minute.
Step 4
In a small bowl, whisk together soy sauce, rice vinegar, and sriracha.
Step 5
Add cooked brown rice, tofu, and sauce to the pan. Stir-fry for 2-3 minutes, until heated through.
Step 6
Garnish with sesame seeds and green onions.
